A common retelling of the history of Gilbert often describes Gilbert as the Hay Capital of the World. In 1902, the Arizona Eastern Railway asked for land donations of the right of way in order to establish a rail line between Phoenix and Florence. An additional section of rail attached to the main line was established on property owned by William "Bobby" Gilbert. This added line, called a rail siding, and the town that sprung up around it, eventually became known as Gilbert. Gilbert became a growing and vibrant farm community whose growth, like much of Arizona’s Valley of the Sun, was fueled by the construction of the Roosevelt Dam and the Eastern and Consolidated Canals in 1911. It remained an agriculture town for many years, and was known as the "Hay Capital of the World" until the late 1920s. Gilbert began to expand and grow rapidly during the 1970s when the Gilbert Town Council approved a strip annexation that encompassed 53 square miles of county land. Although the population was only 1,971 in 1970 the Gilbert Town Council realized that Gilbert would eventually grow and develop much like the neighboring communities of Tempe, Mesa, and Chandler. This and other governmental decisions proved to be an accurate prediction and a farsighted decision. Growth in Gilbert has been rapid and extensive. Recent U.S. census bureau statistics show that Gilbert is the fastest growing city in the United States.

The Gilbert Chamber of Commerce was founded in 1920 and was incorporated in 1978 when the Town of Gilbert had less than 4,000 residents. With a current population of over 160,000 and 1,000 new residents relocating here each month, Gilbert is an area of great economic growth.
